Naturally, Orb of the Firmament and/or Sorcery can increase the damage, but typically there are more useful spells available than Destroy Undead for harming the enemy.

If you have access to very fast units like Dragon Flies or Efreet Sultans, use only one creature in your army and attack a group of wandering undead troops which are slower than your sole warrior.
