Golem is a definition for creatures that are considered to be animated statues, and who share similar characteristics. There are no official definition for golems as a group, and in fact the manuals only mention is that golems (as a group) have neutral morale and immunity to poison. However, there are also other immunities to creatures' special abilities and spells that are common to all golems. Based on these common characteristics, the only creatures considered to be solely golems are:

Stone Golem Iron Golem Stone and Iron Golems
Gold Golem Gold Golem
Diamond Golem Diamond Golem
Steel Golem Steel Golem Horn of the Abyss

Stone and Obsidian Gargoyles, as well as Crystal Dragons have very similar traits as golems, but in in the previously stated reasons are not considered to be golems.
