The damage does not scale enough to cause serious damage when fighting against larger armies with stronger forces. One can easily calculate, that with a power skill of 20, Destroy Undead spell only does 250 points of damage at expert level, which is worth about two Dread Knights. Naturally, Orb of the Firmament and/or Sorcery can increase the damage, but typically there are more useful spells available than Destroy Undead for harming the enemy.
If you have access to very fast units like Dragon Flies or Efreet Sultans, use only one creature in your army and attack a group of wandering undead troops which are slower than your sole warrior.
